THE STORY: This wine is a fun coferment that drinks like adult Kool-Aid. It’s easy and thirst-quenching for any time you want a refreshing chilled red. Coferments are combinations of multiple grapes that ferment together. Here we have Trebbiano (white grapes from Fox Hill) that were pressed as whole clusters to ferment together with Montepulciano left as whole clusters on their stems in an open top stainless tank for a week. We then pressed the fermented wine to develop and age in concrete for 7 months. It’s fun. It’s fresh. And it will go down easy.
FUN FACT: The wine is inspired by the cover of the song “Cuccurucucu” by Franco Battiato, an Italian composer and pop singer. There is a verse where he belts out “Ayay! Ayay! Ayay! ”and it embodies the fun energy this wine has.
