Making sparkling wine is always a fun adventure, and this year's Sparkling Chenin Blanc has real energy behind it. The Chenin Blanc comes from Shell Creek Vineyard in Paso Robles, a historic site planted in 1972 with sandy soils layered over fossilized seashells that add brightness and mineral energy. After a short time on the skins, we pressed the grapes directly and fermented naturally in stainless steel before finishing fermentation in pressurized tank with fresh Chenin Blanc must to capture the bubbles.
