Don't miss out on this special olive oil freshly pressed and harvested from our Fox Hill Vineyard in Mendocino County. Our olive oil is made from a diverse blend of Italian olive trees organically farmed at Fox Hill throughout the vineyard. We have the olives stone milled just down the road after the day of picking concludes. The mix of green and black ripened olives have a nice balance of spice and texture. This is a fresh and well-balanced oil on the palate that's meant to be enjoyed now. This oil isn't for cooking with heat but instead is best used as a finishing olive oil for a variety of dishes, for dipping or for use in salads. One of our favorite ways to use it is on top of fresh sashimi, inspired by Swans in SF's Sicilian Sashimi plate that we love. 

The 100% extra virgin olive oil is made from a variety of organically grown olive trees that stretch along the border of Fox Hill Vineyard. The soils and climate at Fox Hill mimic the climate of Italy's Piedmont region, making it a welcoming place for olive trees to grow. The oil is made from 50% green olives that were not fully ripe and 50% ripe black olives. Hand harvested in the morning and cold-pressed by stone mill the same day and left unfiltered. We let the oil settle for one month before hand bottling and labeling with care.
