KouKou is a special wine with a freshness that we emulate in all of our red wines. Our winemaking style of whole cluster fermentation was unique when we first harvested Cabernet Franc grapes over a decade ago. It wasn’t the typical winemaking approach then, but we loved the way it best captured the grape’s bright and fresh characteristics. The grapes were harvested from Santa Ynez Vineyard located just outside of Santa Barbara. The climate and soil there suits Cabernet Franc grapes with warm days that ease into cool nights that preserve the grape’s natural acidity and freshness. After harvest, the Cabernet Franc underwent carbonic, whole cluster fermentation in stainless steel tank, then pressed and aged in neutral French oak for nine months. Easy to drink now and ages gracefully too.
