Tasting notes: A rich blend of blackberries and elderberries
This Cabernet Sauvignon is a fresher style than other representations of the
grape. We keep it fairly simple in the cellar and harvest the grapes at lower
brix compared to neighboring Napa Valley to help highlight the style we
love, which pairs with food and enjoying on its own. It drinks more as a
California table wine, and nothing is more California than Cabernet
Sauvignon. This wine is 100% Cabernet Sauvignon from Wirth Vineyard in
Solano County Green Valley with a little Cabernet from Massa Vineyard in
Carmel Valley. The combination provides a delicious balance of dark fruits
and soft tannins.
