Notes & Tones – The Wine
2020 Vintage - 90% Tocai Friulano, 10% Trebbiano from Fox Hill Vineyard. The Tocai Friulano was fermented on the skins with native yeasts in sandstone jarres for 10 days, then basket pressed back into the jarres to age. The Trebbiano was fermented with native yeasts on its skins for three days, then pressed into sandstone jarres to finish fermentation and aged for 10 months. No sulfur added during fermentation, aging or at bottling.
EXPLICIT BLACK LABEL: Underwent similar fermentation but aged for just four months.
